This course gives guests the opportunity to learn not just about the food and food culture of Puglia, but also get to know the local people and experience first hand their passion and enthusiasm for cooking, food and life! The ingredients are important too, and simplicity is the key - the cuisine of Southern Puglia reflects the richness of the land: gallons of extra virgin olive oil, wonderful fresh vegetables, fantastic fish and excellent wines such as "primitive" and "salice salentino".


The Experience
This is a 7 night, 8 day cooking course with accommodation in an exclusive private villa. Highlights include exploring unspoilt Salento, 5 cookery lessons, a private tutored wine tasting at Castel di Salve winery, a market visit, a guided tour of Lecce and visiting local artisan producers.

Undiscovered and off the beaten track, Puglia forms the "heel" of Italy, bordered by the Adriatic Sea to the east and the Ionian Sea to the south. An ideal location for a gourmet holiday, it has the longest coast of any Italian region, eight hundred kilometres of coastline stretching down the Adriatic and around the heel into the high arch of the lonian Sea and the Gulf of Taranto. This heel reaches out towards the Eastern Mediterranean, and at times the landscape has the look and feel of Greece rather than the gentler Italy of Rome and the North.

Salento is the heart of Southern Puglia, a region with much to discover. For example, the Cathedral in the handsome Baroque town of Otranto has a mosaic floor to rival Ravenna, while the city of Lecce has more than 40 churches and noble " palazzo" built in the 17th and 18th centuries. South of Lecce the landscape flattens and the sky opens out. Acres of olive groves extend between the dry stone walls. Blue-green sea and red cliffs combine to form a dramatic backdrop.

Venue Casino Pisanelli is a stunning venue, situated in the heart of rural Salento- a real hidden gem. Originally a hunting lodge built in the 17th century for a local count, the estate is now used exclusively for this course for just a few weeks a year. The style is a stunning mix of traditional and modern, with wonderful formal gardens and a swimming pool - the perfect spot to relax after a busy moring in the kitchen.

Who's cooking Antonio is passionate about food and cooking, having learned the best way, from his mother! He runs his own restaurant in Santa Maria di Leuca (the town at the very end of the Salentine peninsula) where he uses the best local ingredients, including fantastic seafood to prepare delicious Salentine dishes.
