This course gives guests the opportunity to learn not just about the food and food culture of Northern Lazio, but also get to know the local people and experience first hand their passion and enthusiasm for cooking, food and life! The ingredients are important too, and simplicity is the key - whether it is ricotta and fresh figs to end a meal, or home-made organic sausages cooked over an open fire, or chunks of parmesan drizzled with balsamic vinegar.

The Experience
This is a 4 night, 5 day cooking course with accommodation in an exclusive private villa. Courses run in spring and autumn. Highlights include 3 cookery lessons, a day in Rome to sight-see and taking part in an olive oil harvest (October and November dates only).

Lazio is a region located at the centre of Italy, bordering Tuscany to the north. It is one of the most beautiful and unspoilt area of Italy. The region is dotted with medieval hill towns, volcanic lakes, empty beaches and rugged mountains. The pace of life is still very rural despite it's proximity to nearby Rome.This five day break in Spring and Autumn is ideal for those with busy diaries.

Venue The luxury villa "I Castagni" is just outside the rural hill village of Tolfa- an hour's drive north of Rome. Within the grounds are chestnut woods which are a delight to wander around, and in autumn to hunt for mushrooms.

On the menu The local "contadini" (farmers) supply us with excellent seasonal produce, such as courgette flowers, radicchio salads, broad beans, fennel and sage. Handmade ravioli stuffed with truffles and ricotta is a staple on the weekly menu, as is a welcome bowl of fagioli con gnochetti (bean and pasta soup), while there is always space for second helpings of an authentic tiramisu!

Who's cooking? Luciana is our local cook and resident "fungarola" (mushroom expert!). Her style of cooking is know as "cucina povera" where she takes everyday ingredients to make simple dishes to feed family and friends. Always highly praised is her pizza, made in the wood fired oven.
