Chicken and goat's cheese burger
Method
2. Stir into the minced chicken and add the chopped coriander, egg, breadcrumbs and salt and pepper.
3. Flour a chopping board and shape the mixture into four balls. Insert a slice of goat's cheese in the centre of each and shape into a burger. Refrigerate until needed.
4. Drizzle the burgers with a touch of olive oil and barbecue until cooked through.
5. Serve on toasted bagels covered with mango chutney. Top with rocket leaves and a squeeze of lime.

Ingredients
1 tbsp Olive oil, plus a little extra for drizzling1 onion, chopped
1 garlic clove, chopped
1 tsp ground cumin
1 thumb fresh ginger root, chopped
2 tsp Chillies, chopped
400g minced Chicken breast
1 tsp chopped Coriander
1 egg
50g breadcrumbs
salt and pepper
1 handful Flour
100g goat's cheese
1 splash Olive oil
To serve
4 sesame bagel, toasted2 tbsp mango chutney
a few rocket leaves
1 lime juice
