Cheddar cheese
Britain's most famous cheese has been imitated all around the world, but for the best taste and texture, look for one labelled traditional West Country farmhouse Cheddar. European law guarantees its authenticity.
Cheddar melts reasonably well and is a useful cheese to have on hand for sauces, toppings and egg dishes such as soufflés. However, the best artisan-made versions should be treated with respect and served on the cheeseboard.
Wrap Cheddar in waxed paper or foil and store in a plastic box in the fridge to keep the cheesy smell away from other foods. Clingfilm will make it sweat.
