Wild rice

The slender black grains known as wild rice are not technically rice, but an aquatic cereal grass native to North America.

A sacred food of the indigenous American Indians, it was traditionally collected by hand from the lakes.

Wild rice takes around 45 minutes to cook, but needs only simple boiling in water or stock until the grains burst to reveal their starchy white interior.

It makes an impressive base for pilafs, salads, stuffings...

Store in a cool dry place, preferably a ceramic or glass airtight container. If you must keep it in the packet in which it was bought, seal it with a clip or elastic band and store it in the refrigerator. Use within three months.
