Sun-dried tomato

Sun-dried tomatoes are halved or quartered fresh tomatoes that have been left to dry in the sun to intensify the flavour and preserve them for use in winter months.
They may be sold simply dried, or more often marinated in oil.

If your sun-dried tomatoes are already marinated in oil, slice or chop for use in salads, pasta dishes, risottos, sauces and casseroles. Some people enjoy eating them straight as an antipasto.

Sun-dried tomatoes are preserved, so will keep dried for several months. Keep opened jars of oil-marinated sun-dried tomatoes in the fridge.
