Buttermilk
Today buttermilk is made in quite a different fashion to that of ye olde farmhouse wyffe. Traditionally buttermilk was a by-product of making butter, the opaque liquid left over after the cream had been churned into a solid state.
Use buttermilk in scones, cakes and soda breads. In India it is served as a chilled drink, often flavoured with toasted cumin, salt or sugar. Buttermilk is also used for refreshing drinks in Scandinavia.
Keep the tub covered in the fridge and observe the manufacturer's use-by-date.
