working in food manufacturing i recently spoke to a rep who works for one of the largest dry ingredient companies in the world, he told me that rice flour is becoming increasingly popular, as it has several advantages over other more conventional flours and will soon become common place on the supermarket shelf.....

I always use rice flour for making little sweetcorn crepes and they are lovely - very light!
