Hi - I have a couple of questions here -

Firstly, pork butt - is that a US name, or is it also known by that name here in the UK? I've heard it referred to as pork shoulder too, but is that correct? Where would I buy pork butt? I want it for my bbq smoker. What's the price like?

Secondly, beef brisket - where can I get this? Is it expensive? I want to have a go with this on the bbq too.

Can I go to somewhere like Smithfields meat market and buy wholesale from the traders there? I've heard that this is the cheapest way of buying meat, but wondered whether or not it was only something that restauranteurs / other traders could do...

If I can do this, any advice or tips for how to buy meat at somewhere like Smithfields?

I currently have a large set of Global kitchen knives (bought for me as a gift) and I'm convinced that they either fell of the back of a lorry, or they aren't quite 100% genuine... They look the business and I quite enjoy using them, however, I want to get myself one good knife - something very good and totally authentic!

I've been looking around on the net, and like the look of the 'Zwilling JA Henckels 4 Star Santoku knife, 18cm' and the 'Wusthof Classic 17cm Santoku Oriental Knife with Granton Edge - 4183'. Anyone able to tell me if these knives are any good? I could go for a decent version of one of the Global's too, but I'm open to suggestions.

If I'm getting a decent knife, I suppose that I'll need to have some way of sharpening it. What would you guys recommend?

I guess I ought to say that I'm not a pro chef, but I do love cooking at home. I'm reading Anthony Bourdain's first book at the moment and he talks about knives, going into some detail about different metals needing different levels of TLC. Is this something that I really need to take into account.

No, I haven't heard of that TV series, and can't find any info about it online either. I was hopeful that I might be able to download a couple of episodes from somewhere, but had no luck...

Maggie - I saw that same interview, which I think may have prompted me to start digging for more info.

I was wondering if there are any BBQ competitions / contests anywhere in the UK, like they have in the US? I don't want to enter, but I'd love to go along and have a look / chat with the experts.

I am trying to track down a fishmonger near to where I live (Berkshire / Surrey / Hants border), but am having no luck. I've tried yell.com, but failed there too.

I've looked at the fresh fish counter in Tesco, but as this fish will be for sushi, I am concerned about the quality and level of freshness. Am I right to be concerned, or will it be fine?

I had a quick look at online seafood websites yesterday - not in any great detail yet, but I suppose this is another option.

Any tips, advice or ideas would be much appreicated.
