I have always been told that this is a galantine, I have one every year at Christmas. My butcher does it for me, he starts off with 2 lemons (punctured with a fork a few times) he wraps a de-boned chicken around the lemons then stuffs this into a de-boned turkey. I usually end up with about 5kg of pure meat which takes about 4 hours to roast. I now live in a small mountain village in southern Spain, Mijas Pueblo, and because my Spanish is appalling I had great fun and a large audience when I tried to explain to my new Spanish butcher exactly what I wanted, luckily a dictionary and numerous hand gestures got me what I wanted.

I would presume that it is farmed, as to be classed as organic there must have been some control over what the fish was fed etc, this would be impossible in wild salmon as the have free range of the ocean/river, or am I being a little too naive ?????

Hi Debbieanne.......good to hear from you, I know Calahonda quite well as I've been here over 4 years and used to work in La Cala.
Tesco in Gib is just on the other side of the airport runway, you will see a signpost saying Marina, it's a righthand turn, it's a small twisty road/lane about 200/300yds down the road you pass a school on the left the come to a garage/car showroom, the Tesco/Checkpoint carpark is just past and behind this garage, you should see the signs if you look up to your right.

It's only a smallish shop nowhere near as big as Safeway but is quite good, I don't buy my meat or veg there as S/way is far superior, I also found that the same brand corned beef was 96p in Tesco and only 49p in S/way. There is also a tiny branch next door to Marks & Spencer, it's called Checkpoint but is Tesco.
How long have you been here ? I suppose you know all about the British things on offer in Buyrite and Euromarket in Fuegirola ?

Hi Debbieanne.....I actually live in Mijas Pueblo, not in the touristy bit but in the barrio, the Spanish quarter, my house almost backs onto the ring road around the top of the village so we are extremely high up. My husband and I work in Benalmadena Pueblo for an English financial services company, I run the office and do all the admin etc. I love the Danish Centre especially the cafe and the deli but it's difficult getting there as I work 10-6 mon -fri with no siesta and saturdays we meet friends for breakfast/lunch in Mijas, but if it's at all possible I would love to meet you.

On my way to work on friday morning about 9.15.am who did I spy in the Pueblo having breakfast at a local bar but AWT.
I've seen him 2 or 3 times over the last couple of years (I've been here 5 years and only been back to the UK once)
Maybe next time I'll wave as I pass.

Hi Porridge, it's really difficult to find vegi food in southern Spain as meat and fish are eaten at most meals. As for 'nice' restaurants it's very difficult to recommend somewhere as we don't really eat out in restaurants we mainly use tapas bars. I have seen a vegi restaurant in Los Boliches, which is between Benalmadena Costa and Fuengirola it is on the same road as the feria ground where they hold the enormous tuesday market. There is an excellent tapas bar in Fuengirola called Tomaquete, it is in a back street called Calle Palangreros behind the main post office which is just off the main church square. When you come up to Mijas ask for Calle Carril, walk down this street past all the shops and keep going along the narrow whitewashed street, it's quite a way but worth it, when you get to where the road splits, just in front of a beautiful old church, you will see a small lane on your left hand side, there is a sign saying Bar Alarcon, go into this bar and up to the first floor for the restaurant, it's very Spanish but very friendly.

Hi Porridge, weather forecast is rain for tues/wed/thurs then sunny again with temps in mid 70's, but they are often wrong, if we get a few nights with fairly strong winds then they blow the rain clouds away. This past week the forecast was rain for 3 days but it didn't materialise, it was still a little bit overcast and chilly (for me) with temps in the mid 60's. Are you staying in Benalmadena Pueblo or Costa ? I work in an office in the Pueblo and have to travel the back mountain road !!!!! from Mijas every day, be very careful if you're driving up that way it can be quite dangerous if you don't know the road, it can be dangerous even if you do know the road !!!!!. Hi Porridge.......sorry to be the bearer of bad news but the forecast is rain today/tues/wed/thurs then sunny after that, it's not too cold, the Brit tourists are still walking around in shorts and t-shirts with see-through plastic macs over the top, I usually wear a sweatshirt-type zipped jacket over a t-shirt during the day with cotton trousers (mid-calf length) but at night you'll need jeans and a fleece.
As I mentioned in an earlier posting we may not get all of the rain forecast so it's better to bring clothes that can go on in layers, so you can layer up or strip off, you will definitely not need swimwear unless you look good with purple skin !!!
I wouldn't bother bringing a brolly as all the cheap shops sell them at 6€ (£3.60) each.
Snoozy is absolutely right about Santiago's being an excellent restaurant, especially in summer when you can eat outside in the courtyard/orchard with tame pet rabbits running around the grounds, but I think it's only open in the evenings and you would have to get a taxi as it's probably about 25 miles over the mountains, plus it's one of the more expensive restaurants in the area.

Hi Porridge...........Glad you enjoyed your time out here, the weather has now changed and we're up in the mid 70's, time to turn on the air-con in the office. I saw the AWT programme, it's strange seeing him out and about shopping in the market where I go to do some of my shopping but I don't use the furniture store he was in, much too expensive and 'Hollywood' most of us don't live in designer villas either. Hi .....I wonder if anyone can help me, I'm looking for a tried and tested recipe for a chutney/preserve made with tomatoes, peppers, onions etc but no fruit, I love garlic and I like spicy things but have an aversion to things like sultanas or apple mixed in with savoury things. Hope someone can help as I'm about to be inundated with all of the above veggies very soon. I've tried 'google' but with no luck. Thanks in anticipation......Sue Bowen

Hi susiepops.........try www.spanishhampers.co.uk/tapas.html they have some traditional tapas recipes listed. Also try google for gambas pil-pil this is prawns cooked in hot oil with garlic and chillies, the prawns must be raw not pre-cooked or they will go extremely rubbery and tasteless. Also google for albondigas, these are meatballs in tomato sauce. If you need any more ideas let me know. Regards Sue

I was just about to ask you all if you had a recipe for preserving peaches when I realised that I hadn't tried google. I've now found several recipes for peaches and a really superb site called picklenet.com. I would still like to know if any of you out there have a tried and tested recipe for preserving peaches (not pickled).
Thanking you in anticipation. For those of you in the UK enjoy your Bank Hol week-end, monday isn't a hol in Spain so I'll be working, I hope you get some of our Spanish weather to make it more enjoyable. I was watching TV last night and a programme was showing some footage of Newcastle, the Quayside and the bridges, and I felt a slight twinge of homesickness (the first in 5 years) and I started fantasising, imagining myself walking around M&S food hall, Tesco's and Sainsbury's etc...........sad or what ????? Hi MaryJane.......Houseguests, just one of the joys !!!!! of living in Spain, next year I'm going to tell everyone that I've got something horribly contagious, maybe that will put them off visiting. Sounds as though it could be similar to a recipe that I do very occasionally, quickly dip ginger snaps in and out of brandy or sherry or something dark and alcoholic and then sandwich together with whipped cream (with a little of whatever you dipped the biscuits in beaten in) then cover with whipped cream and decorate with fresh fruit. You can form the biscuits/cream into a log shape or a circle.

Hi Brie I'm also enjoying the series but it's because I live about 1 mile away from AWT's Spanish house. When you see the episode where he buys his garlic and spices that's the same market stall that I use and I can tell you it's absolute heaven. Sue Cheeky

Does anyone have a recipe for a savoury filling summer pudding type of dish. Someone made one on masterchef but I haven't been able to source the recipe. It was made with bread but the filling was a selection of roasted mediterranean veg. Is anyone creative enough to come up with a recipe. Cheeky

if you put chicken royals into the search box at the top of the page you get a Simon Rimmer recipe for royal chicken in almond sauce, it sounds as though it would suit your recipe.

Does anyone know of a supplier of these wonderful storage bags, I've just used my last ones. Originally I got my supply from America about 5 years ago (12 boxes) so maybe they now stock them in the UK, I certainly haven't seen them here in Spain. I've tried other makes/variations but these are by far the best. Hope someone can help. Smile

It's not 'chef speak'........it's 'yorkshire speak', it's just the way yorkshire people talk. I think all of our regional differences are wonderful and long may it stay that way, it would be awful if we were all the same bland copy of one another. From a very proud geordie lass now living in Spain. Wink

Hi Porridge, it's a bit dull and overcast at the moment and we've had 2 or 3 spots of rain this lunch-time even though it's still 22'C. I knew something would happen as the company I work for are sponsoring an outdoor bowls comp and it's my turn to do the last couple of hours today 4-6pm, no doubt we'll have torrential rain, gales and possibly even snow during these 2 hours, thank heavens there's a bar and I can shout encoragement from there.
