Tuna with Lime, Coriander and Sea Salt Rub

Method

 
1. Pound the chilli, sea salt, peppercorns, lime zest and coriander seeds using a pestle and mortar.

2. Brush the tuna with olive oil on both sides. Sprinkle the rub onto a plate and press the steaks into the mixture.

3. Cook the tuna on the barbecue or in a non-stick frying pan, for 1 - 2 minutes on each side, or according to preference.

4. Serve with a tomato salad and buttered ciabatta.

Cook's note: if you do not have a pestle and mortar, put the ingredients in a freezer bag and crush them with a rolling pin.

1/2 tsp crushed dried chillies
1/2 tsp coarse sea salt
1 tbsp mixed peppercorns
1 lime, zest only
1 tsp Coriander seeds
Olive oil, for brushing
2 tuna steaks

To serve (optional)

toasted ciabatta loaf
Butter
