Rhubarb and Orange Cordial

Method

 
1. Place the rhubarb, lemon zest and juice, orange zest and juice, caster sugar and water in a large saucepan.

2. Bring to the boil.

3. Reduce the heat and simmer for 20 minutes.

4. Strain through muslin and bottle. The cordial will keep for 1 week in the refrigerator.

5. To serve it, dilute it with fizzy water and serve with ice and a slice of orange.

450g caster sugar
570ml water

To serve
