Prawns with lemon grass

Method

 
1. Place the prawns in a large bowl and coat thoroughly with the curry paste.

2. Add the fish sauce, sugar and lime juice and mix well.

3. Thread the prawns on to the lemon grass stems.

4. Heat the olive oil in a pan over a medium heat and fry the prawns for 3-4 minutes, until cooked through, turning them as required. Serve immediately!

Ingredients

200g large, raw peeled prawns, with tail still on
1½ tbsp red curry paste
½ tsp Fish Sauce
10g caster sugar
juice 1 lime
6 lemon grass stalks
2 tbsp Olive oil
