I popped the recipe above onto Goggle today and was shown a similar request for anybody who knows this recipe on this UK food message board back in 2004. I am not proficient at using this UK Food website, however that inquiry on this site back in 2004 brought no replies.. To echo what I read there,
"I like these tasty chinese chicken wings with chilli and salt, sometime garlic is added" Does anybody have a recipe??--I can disclose that I have made a version of these by experimenting, however its not practical because the final cooking process contaminates the cooking oil in the wok to such an extent that the mess genorated would not not be practical in any Chinese take away kitchen. My recipe--
12 chicken wings
tomato ketchup
Chilli sause
Whole chillis
corn flour
plain flour
garlic powder
salt
an egg
a wok
an oven
Cut all the chicken wings in half at the knuckle, cut off all the wing ends and discard. Mix together equal quantities of ketchup and chilli sause, spread over the chichen wings and allow to marinate for 1 hour in the fridge. Warm the oven and cook the wings at around gas mark 6 for 20 minutes, take out the oven and allow to cool, lift onto a wire rack or plate before cooling too much to prevent sticking to base of pan.
Mix 2 spoon of plain flour with one spoon of corn flour and 1 spoon of salt and 1 spoon of garlic powder. Beat the egg and cover the cool chicken wings before dipping each wing in the flour mixture throughly covering both sides of the wings with the seasoned flour. In a wok heat peanut oil to nearly smoking. Add the floured chicken wings a few at a time, cook for 30 seconds and turn, another 30 seconds if the oil is hot enough the wings turn golden and cooked.. Remove from the oil and drain on kitchen paper.... These are very nice, very flavourful but messy to cook because as I have mentioned the oil gets messy with the flour coating coming off at this cooking stage and sinking to the base of the wok and burning in the wok from the hot oil.. Anybody know an easier way?
