Hi Vicki, You might like to try this recipe which we use when we have to make dairy and egg free cakes.
DAIRY FREE CHOCOLATE CAKE
INGREDIENTS METRIC POUNDS & OUNCES
Self raising flour 300g 12oz
Brown sugar 300g 12oz
Cocoa Powder 50g 2oz
Salt Pinch Pinch
Water 480g 16 fl oz
Vegetable oil 60g 2 fl oz
Vinegar 10g ½ oz
Method
1. Preheat the oven to 180C, 350F.
2. In a large mixing bowl, mix together all the dry ingredients .
3. Mix the liquids together and stream in on slow speed.
4. Mix on second speed for two minutws.
5. Transfer the mixture to a 20cm/8 inch cake tin and bake for 30 - 35 minutes.
You can also put it in a plastic bowl and make a steamed or micrwave pudding out of it and add a chocolate sauce.
