I don't find "2 handfuls" a useful way to measure something like lentils!
Instead of topping with fried pitta bread, try chip-size chunks of roasted sweet potato. First wash the potatoes, par boil in their skins in lightly sated water (about 10 mins). Cut into small thick chip size pieces. Heat oven to 200C. Put sweet potatoes in a baking dish or tray. lightly coat with olive oil and dust with a little Chinese 5 spice, no salt and white pepper. Cook, turning occasionally, until crisp and golden (about 40 minutes).
superbfilling and cheap for me paying £1000 a month to keep my husband in a nursing home.he is too ill to be at home.
So fragrant and quick + simple to make! The colour is also just divine. I also added a stick of shredded celery, which adds a different texture and fresheness.

sounds great but any chance of protien, fats, ect so those of us one points or syns diets can work out values

I dont usually like lentils, but decided to give this a go. Really easy and surprisingly delicious. Good source of protein and low in fat, Which was a winner with my health concious body building son.
