Hi Anyjack! are you having a retro moment? only i asked a similar question going back a while now because my husband had a thing for chocolate pudding with mint custard at school,and he is desperate to have it again! The nearest thing that they do in schools today to it is choccy muffin with a peppermint creme sauce,don't really think it's quite the same though!hope someone can give us an answer Frown

I found this on a food forum. Any use to you?
"hi i was a school cook for 20 years and the way we made the mint custard was cornflour and sugar mixed with milk to a paste then poured into boiled milk and stirred to thicken. We then added peppermint flavouring to taste ;you then use green food colouring to colour. I cannot remember the exact quantities you will have to play about with it"

My husband has also been on about trying to find mint custard although i have never heard of it.. i will have a go at making that for him and see if i can recreate his childhood memories.. Smile
