wanted a new recipe for a spare rib sauce,something alittle bit different,

any sugesstions?

Yes, you're right Rustie. They end up with a coating so they're not dry - just the way I like them... lol

If I remember rightly Imogen, Ed Baines ribs even though the name makes you think dry, did end up sort of moist and gooey didn't they?
well not Ed's actual ribs but the ones he made, lol, think I'd better check out the recipe.

Ed Baines did a really lovely looking recipe for Chinese salt and pepper ribs thats on the site. Do a search for ribs and it should come up. Yum yum!

Hi Jane,
How about this?
3/4 cup Apricot jam
1/4 cup chilli sauce..I use lingam`s as it is hot sweet and sour.
1 tbsp grated ginger
2 tbsp sukiyaki sauce
2 tbsp dry sherry
4 star anise
1/2 tsp Szechuan pepper corns, roasted lightly and crushed.
Combine all the ing together and cook till jam melts. leave to cool. remove star anise and use to brush ribs which have been simmered in boiling water for about 10 mins and patted dry. Marinate with jam mixture overnight if possible. Drain from marinade and then barbecue or grill basting with the marinade. Monica.
