I bought some wet walnuts from the greengrocer this morning but am not sure what to do with them. Can they be eaten as they are? Does anyone know a good recipe for them?

Walnuts can be pickled but I think they must be picked soft and green in about June time, has anyone ever pickled their own and what is the best time to do it, the wet ones now are too far gone to pickle so what do you do with them apart from crack them open.
