Apple Ideas

We have several apple trees in our new house that are giving a super crop, more than we can possibly consume. There are 3 dessert types and 1 cooker. So far I've made a batch of chutney and jam, stewed a stack and frozen for crumbles plus made a continental apple cake which uses a decent amount.
However we have so many windfalls and I hate seeing them go in the compost so does anyone have any recipes that use decent quantities of the fruit or better still something that keeps/freezes well.

Also I saw a recipe on here for preserved apples & pears but does anyone know how long they'd keep?
Just a thought, could I make an apple liqueur?

How about making some apple jelly flavoured with mint, sage or rosemary, nice pressies at Christmas. Or apple cider/ vinegar

Sounds interesting. How do you do them? Finely slice and then Fry or bake in oven?

Also do you or anyone out there know the best way to dry apples? I was thinking about making some dried apple rings, like you buy in health food shops.

How about making some apple "crisps"? They last for ages in a sealed jam jar and make a healthy snack. They can also be rehydrated if making a fruit compote.
