Chicken Supreme

Thread Starter: peterM51994    Started: Thu 25 Jun 2009    Replies: 8

Could any of you great foodies out there help me out. I recently got married and one of the choices of the hot buffet was chicken supreme, to our astonishment we got dry chicken breasts with no sauce. We sent a letter to the hotel with this being one of the queries and eventually received a reply from the manager who said he had discussed this with the head chef and I quote" chicken supreme is the description of how a chicken is cut and the part of the chicken used. A sauce is added if requested". Could anyone confirm this or are they just trying to pull the wool over my eyes
Many thanks
Pete Confused

I am glad you had more confidence to go back to the hotel, and thus getting a compensation. Cool

I think you need to argue that you ordered "a dish", not a cut of meat, and state what you would like them to do to compensate you.

If your claim is reasonable, you may find that they will settle with you while not accepting responsibilty for the mix up.

The cut is called "a supreme of chicken", but the dish: "chicken supreme" usually comes with a sauce.

If the sauce was an optional extra, then they should have told you that before the event.

If you order "a gammon steak", you don't expect to get a gammon steak on a plate with nothing else.

Such issues are really for 'front of house' management, the fact that they have to "ask the chef" suggests that they don't really know what they are about.

As suggested above, if it's a large company or a chain, contact Customer Services and state your case while also saying what they need to do to settle this with you.

Good luck.

Hi Pete

In my experience, a Supreme of Chicken is a cut as described. A Chicken Supreme is a Chicken Breast with a Sauce.

But, I would be inclined to come at this problem by another route. Your wedding meal was part of a service provided by the hotel. As such it needs to be 'fit for purpose', in this case a wedding meal is a celebration and a plain chicken breast does not fall into that category. I suspect that the person who took the booking failed to understand the menu and did not explain what you were ordering was a plain breast. Also, the chef has failed in his job as he has not questioned this choice.

If this hotel is part of a large chain I suggest you contact the Managing Director and the Marketing Director with a phone call, followed up by a letter. Ask for a refund on the basis that this food spoiled your special day and caused you both to be upset.

If you do not get a proper response, consider a claim through the Small Claims Court for a refund on the meal or go to the local press and tell your story. This approach is also probably the best way to manage the situation if this is a small private hotel. Of course, try the hotel owner first to see what they will do. Bad press can hit a small business where it hurts.

Hope that helps. Good Luck!

Thanks Rosti for your help, think I will speak to the Manager again and see if he thinks it is fair not to explain properly as I am sure that for the majority of people chicken supreme would always have a creamy sauce and probably diced chicken

Yes and no.

Sorry. I've tried to dig out some extra info from the internet.

It can be a chicken breast, or part of the breast with the top piece of the wing left attached.

However there are lots and lots of images on Google showing Chicken Supreme with a sauce as well.

Or, chopped up leftover chicken in sauce.

So, I would be inclined to reply that although you understand that chicken supreme is a cut of chicken, it was not explained to you before your wedding that you had to request sauce and no choice of sauces were offered, as it was a wedding buffet you were expecting something slightly more superior.

Not sure if this really helps you though.

but would you say a dry chicken breast is such a cut??

Confusingly Chicken Supreme is a cut of chicken and more recently the name of a dish with a mushroom sauce.

So unfortunately unless you asked about the sauce when the menu was set I think they are within their rights.

Sorry
