Many years ago a works canteen served steak & kidney with a thick, light, baked sponge type savory topping. Can anyone help with a recipe for this topping.

Mmmm, curious - not something I'm familiar with. I was thinking maybe a steamed pudding type topping or even a cobbler type topping.

No it was like a course sponge texture that had risen about 1.5 inches deep.
