Hi Georgie
The coconut is Angle flake by Bakers in a blue and yellow pack it is on the web site in bakeing then other ingredience. Hope you find it and it is what you are looking for, it works in Ina Gartens coconut muffins Im sure its the one she uses.

My excitment at finding the frozen shredded coconut was short-lived I am afraid. When I tested the defrosted coconut it tasted slightly salty, although it was marked as 100% coconut.

I have looked at Letseatdirect - and could only find flaked coconut.

Are you sure you found shredded coconut? - long threads like worms.

Fingers crossed.

You can buy coconut extract from Jane Asher.
Also you can shred fresh coconut in the food processor and then freeze it. On Delia's site it tells you how to do it step-by-step.

Thank you for all your responses....I had forgotten that I had posted the original question.

I haven't been able to find it in our local M&S or Julian Graves, but today I found it in a Vietnamese/Chinese grocery store in Guildford, Surrey. It is frozen and cost £0.99 for 250g.

The other thing I can't find in the UK is Coconut extract. My sisters live in Australia, and they say it is a normal item in their food shops, so I am going to ask them to send me some.

Thanks again

Shredded coconut is available from Julian Graves, the high street healthfood shop, and Marks and spencers food shops. I guess you may want it for the many Barefoot Contessa recipes that use shredded coconut? The U.S packet coconut looks fresher rather than our more dried version, but it works fine.
