Brawn

Great recipe if you could get a pigs head, I have tried all over the place and cannot get one from any of my local Butchers.

Am having to use a hock instead of a pigs head.

When I used to buy half a pig from my butcher for the freezer I was always offered half a head as well. Strange that there don't seem to be heads around these days.

The abattoir is a good idea, or even a meat wholesaler, it could also be worth contacting a couple of online sites to see if they can help.

I can get pigs trotters and do use them too, but it does not taste the same without the pigs head, its not bad with the hock, just not the same as with a pigs head.

Oh Kyal, how you take me back many years. Coming home from school and seeing the snout poking out from under the saucepan lid. I could never touch the stuff but I understand that my mum made a mean "brawn" All pure ingredients with no preservatives or gelatine. It's a shame because I'm sure that the hock wont be quite the same. Have you, dare I ask, contacted the local abattoir butcher? How wonderful that these traditions are continued.

Can you get pigs trotters? My mum always made brawn with them and it was delicious.
