REHEATING RICE

IVE JUST BEEN TOLD THAT RICE SHOULD NEVER BE REHEATED. IS THIS TRUE AS I ALWAYS RINSE MY COOKED RICE IN COLD WATER AND STAIN . THEN REHEAT POURING BOILING WATER OVER UNTIL PIPING HOT. THIS KEEPS ALL GRIANS SEPERATE. IDEAL FOR STIR FRYING ETC. Confused Frown

I am always reheating rice. But I make sure it is cooled as quickly as possible and heated to a high temperature.

The only way you can do decent fried rice is to reheat it but it is cooled in the fridge which also dries the rice to make for a better result.

If it is too dry I like to stir a beaten egg and fry the rice. You then get a really moist result.

No, it's not true shiraz, however reheating rice to the correct temperature is an absolute must. Uncooked rice could contain spores which can cause food poisoning and a lot of the time they survive the cooking process. If cooked rice is left at room temperature this encourages the spores to germinate and turn into bacteria which in turn *could* cause food poisoning.

If the rice is stored in the fridge then it's less likely this will happen, but whichever way the rice was stored, you absolutely must reheat the rice to a high temperature before eating.
