Christmas cake and pudding

I know that you are supposed to make these a while before Christmas to let them mature but I haven't actually come across a recipe that tells you how long in advance it should be made!

Obviously, there is only a couple of weeks to go now and I would like to have a go at making something but wondered if it's too late for it all now?

Also, a little while ago I saw a Christmas cake that used different dried fruit in than the norm, more tropical but I can't remember or find it again. Anyone have any ideas for something like this?

Thankyou Old Thatch, Victoria132 and louby lou 1 for your kind words, how very kind of you all. It was a huge funeral, she was a much loved lady. They call Alzheimers 'The long Goodbye' and it is awful and distressing for the family. But over now for us, and there is a relief in there with the sadness.

I'm giving myself the day off today, but then my attenttions MUST turn to Christmas and FOOD. I haven't been able to give anything a thought! I think I'll go for simple this year (I think I'll have to), a minimalistic Christmas Wink

Oh possett I am so sorry you have problems of your own. I do hope everything goes well tomorrow and be strong - I am sure that memories of your mum will be there at everyturn for the rest of your life to comfort you. Take care and I will certainly be thinking of you and your family tomorrow.

Sorry about your mum, Posset. My mother died last year, age 92. It would have been her 94th birthday on the 2nd of this month. My friend and I were sitting in the garden drinking wine, and I mentioned it. Immediately my friend raised her glass, and said "Happy Birthday, Gran, where ever you are."
You will miss your mum; even now when I pass mother's bedroom (she lived with me for 18 months before she died) I can still see her sitting in bed, waving to me. It will always be called Gran's room, just as her folding bed tray is Gran's tray.
All you will have now are your memories, enjoy them and treasure each one.

Great to hear you are back home Old Thatch, albeit a little sore. You will mend better there. What a nightmare having to live with Sudden death syndrome! Gastro and I were wondering how you were getting on and posted on the re-heating rice thread, to that effect. Gosh, I can't imagine how you managed to get through each day pre op. Anyway, you have your kite flying to look forward to and a new lease of life.

My poor old Mum died last week and her funeral is tomorrow, so this household is rather sad and reflective today. Yes cooking has kept me sane this last week. I have been feeding the proverbial 5,000! Not comfort eating, but comfort cooking! All the best Hug

I have a tropical fruit Christmas cake recipe somewhere; I do a search through my books and files and let you know.
When I was (much) younger, I made a different Christmas cake every year for ten years, and there is a tropical one among them.

Oh posset thank you. So very glad to be home - very sore and tired but have been told the operation was a great success (I have genetic hypertrophic cardiomyopathy - or sudden death syndrome as it used to be known - with obstruction, but my heart has been sliced and nipped here and there - and now no obstruction.) My aim is to run along Dunwich beach next year with a kite!!!
I have "others" in my kitchen at the mo. and I am being a model patient but you can imagine how difficult that is! Over the last 7 years my passion for food and cooking has made a valuable contribution to my sanity. I go on.

HCB nothing is ever too late. It may well be that you will get a deeper flavour if your xmas goodies are left to mature but everything will still be infinitely better, I am owning this statement, than most mass produced products. I normally make my cakes at end of Oct./beginning of Nov. and the xmas puddings I have made up to a week beforehand. This year I am using a pud I made last year.
BUT have you thought of doing Delias mincemeat christmas cake, which, if my memory serves me, can be made later? If I can find the link I'll post it for you.
