Christmas cake after-care

I've baked my first ever Christmas cake and have been feeding it with cointreau - my problem is, how do you know how much to add but ensure that it won't be soggy if you've added too much? Putting it back into the oven - or would this ruin it even more? I wanted to give it some extra flavour since I think the mixture was a bit bland. Could I perhaps cover it with orange zest before the marzipan? Is now the time to be adding marzipan? Finally, do you need to wait after covering with marzipan before doing the icing? Any other advice much appreciated!

I agree - no zest. As for the 'feeding' of the cake I find that a tablespoon of liquer each week will suffice - and mine have never become soggy. The only way that will happen is if you have used a very 'floury' recipe. I also alternate which side I feed - top one week, bottom the next and so on.

No to the orange zest as this might encourage mould in your lovely cake,dont forget this would not be cooked or full of sugar like marzipan or icing.

I would not bother with the orange zest as you will be brushing on some apricot jam before covering with marzipan.
