I wouldn't put sugar in the soup if you are using frozen peas. Frozen peas is sweet enough. I had to make pea soup from frozen peas last week because my freezer broke down. I have made it similarly to your recipe lesley50 1 and it was very sweet.

Hi Livtoots this recipe is absolutely delicious:-
Old Fashioned Shropshire Pea Soup
2oz butter
1 small onion finely chopped]
2lb fresh or frozen peas
1/2 teasp sugar
2 pints chicken stock
2 large springs fresh mint
2 egg yolks
5fl oz fresh cream (your could use creme freche I suppose)
salt & pepper and more mint to garnish
Fry onion in butter slowly until soft but not coloured, keep yolks and cream to one side, add rest of ingredients, bring to boil and cook for approx 30 mins - puree in blender (or use sieve) - beat yolks and cream add to soup stirring gently BUT DO NOT BOIL OR IT WILL CURDLE adjust seasoning to taste and garnish with sprig of fresh mint, serve with fresh warm crusty bread - lovely -
PS I DONT THINK THIS SOUP TASTES ANY DIFFERANT IF YOU USE FROZ OR FRESH PEAS regards lesley50 1
