how about lemon sorbet, you can even put a slug of limoncello in, not too much though, other wise it wont freeze

You can slice them and freeze them and then when you need one for a gin and tonic just take it out and pop it in - helps the drink to chill as well!!

limoncello is a liquer worth the effort.

Have you thought about doing preserved lemons?
