Best Roast pots

Hey guys im new 2 the site, and very new 2 cooking as u can probably tell from my post!! Can anyone give me any good tips on cooking roast potatoes? I can't seem 2 get mine the way i want.... Fluffy in the middle and crisp on the outside. I noticed that in Nigellas Feast she mentioned using semollina? Anyone else tried that?

For the final 20-25 mins i drain off as much oil as possible,sprinkle with season all toss them around the tray then turn the oven up to about 220C. Also try using King Edwards

I made Nigella's roasties - they were fab, we used roosters and they worked a treat - I didn't use goose fat though but very hot olive oil - they were the best roast potatoes we have ever had. Here is a link for the exact way to make them.

It also helps to use the right type of potato - I would recommend Maris Piper. Another thing I do is to 'chuff' the sides of the potatoes by tossing them about after they have drained. For me it leads to a crispier exterior Wink

Par boil them for about 5 minutes. Drain them. Get the Oil VERY hot in the roasting tin. 220/240C. Tip potatoes in and cook for approx 1 hour. Turn every 10-15 minutes. Yummy...
