vegetable inspiration

hi folks, i need some inspiration for vegetarian meals, i seem to be cooking the same ten dishes over and over again recently.
any vegetarian meal ideas would be greatly appreciated, as long as they don't have mushrooms in!! Blurgh

Hi cheese obsessive, sorry for the delay, there is no excuse other than I forgot, here is the list of ingredients for the potato and pomegranate salad - I had almost remembered it exactly, it is not a recipe as such as I just chuck everything in and it depends on how many potatoes you are using.
Boil and dice potatoes, mix in a bowl with pomegranate seeds (fresh when they are in season) add about a tablespoon of lemon juice, teas chaat masala, teas cumin, pinch of white pepper and fresh coriander - let me know what you think if you make it.

yeah, i've had it from the supermarket before and its good, but i haven't been able to get hold of any recently, even in the larger supermarkets

By the way, cheese obsessive, I know it is supposed to be easy but I never make my own paneer, I just buy it from the supermarket!

you can but I'll have to check that when I get home as I kind of copied it from a restaurant, but it is basically cooked diced potatoes mixed with pomegranate seeds and fresh coriander and add spices - teas chaat masala, teas cumin, pinch of white pepper - I think that may be all but I will check and let you know later.

bookey I've got a load of recipes (sweet) on a disc. Let me access it and I'll post some for you. Have a look this afternoon. Do you like things like summer fruits with crumble with sweetened low fat fromage frais? This would be 6 syns but very filling and tasty.here is a quick one. Large tub very low fat fromage frais. Make up a sugar free jelly, any flavour you prefer. Use a little water to melt the jelly crystals, then make up to a pint with cold water. Stir in the fromage frais put in fridge to set. Do you like cheesecake? Got one using weetabix for a healthy extra, using it for the base of the cheesecake. You can eat half of this cake as free food, so long as you use weetabix as a healthy extra. Smile

No problem - here you go -
juice of half a lime
teaspoon of minced garlic
1 inch of fresh ginger root, grated
half teas ground cumin
one teas ground coriander
half teas garam masala
a pinch of Paprika
a pinch of salt
one block of paneer
chop the paneer into cubes - mix the marinade ingredients together with a tablespoon of groundnut oil - marinade the paneer for about an hour if possible and then cook in a hot oven for about 2- mins to half an hour depending how big the cubes are or you can skewer them and do them on a griddle or the bbq! - enjoy Smile

I usually serve with a spicy potato and pomegrante salad and some naan bread.

Hi cheese obessive, have you tried any of the recipes you have already been given, I know this thread has kind of got hijacked and some chicken and slimming world recipes got posted, but there are some nice veggie recipes already. Would you like the recipes for any of the dishes I mentioned - my paneer tikka or satay sauce with tofu for example?

any ideas for low syn puds would be much appreciated, really missing something sweet in the evenings, I often have trouble eating my a choice so if it includes milk that would be fine

I served my spatchcock chicken with some mango chutney by the way it was delicious, veg I used, carrots, beetroot, onions,courgettes & suede, all were really nice except the suede

snowlight, you could try the pepper sauce but you may find that the sweet chilli sauce adds alot of moisture making the burgers really moist, let me know if you try it

belazu ade rose harissa too-you can get it in the special selection at sainsburys and in the bigger tescos. try putting it on a piece of fish before you cook it - just a tiny smear - and it is lovely

Hi Snowlight, it is a spicy paste, I think it may be Morrocan but I could be wrong, it comes in a small jar and it gives a delicious kick to couscous - not sure what else you can use it in but I am sure there are lots of things!

Bookey you can make the chicken burgers syn free, just add a little chilli powder or use a few drops of that pepper sauce. Can't remember the name of it. You know it comes in a small bottle and is liquidy and blows your head off if you use too much. Smile
