The potato and cauliflower mix suggested by jennifer is really good, and I always make Delia's no fat white sauce. I use cornflour and it works every time.

Yes, that's a really good tip. You could also try combining celeriac mash with the potatoes, too.

A good tip here to reduce the carb content of the potatoes is to cook some cauliflower in with the potatoes. It bulks out the potato and you actually can't taste it. A very good way of reducing the calories. Another thing I do is to grate a tiny bit of parmesan on the top if I want a cheese topping. You don't need much as it goes so far.The sauce flour is a good idea too since you dont need the butter for the sauce. You can get this in the major supermarkets by the cornflours etc.

You can now buy sauce flour which allows you to make flour based sauces without using fat, so the only fat would be what is in the milk.

Hi
Delia does a 'no-fat' white sauce, it's in a 'diet' chapter in one of the 'How to Cook' books, can look it up if you like. Perhaps add some fresh herbs that? Maybe leave out cheese topping altogether?
Or do what I do after twenty years of dieting - eat smaller portions of everthing and go for a run the next day! Seriously though, lots of clever recipes in the 'diet' section of the Delia book. Hope that helps.

Off the top of my head:
Select some fish from a normal fish pie recipe. Poach in some milk until not quite cooked. Make a basic white sauce with low fat milk (boil milk first and leave to cool with peppercorns, blade mace, small onion, bay leaf steeping - then make a roux with the cooled, sieved milk and milk from poached fish and add chopped parsley). Place fish in your dish. Add vegetables, etc if given in your normal recipe (some say carrots, some say halved boiled eggs). Pour over fish and veg, etc. Top with mashed potatoes (made without butter). Low fat cheese topping optional. Bake in oven for 20-30 minutes.
