whats the best thing to use when baking scones should i use strong white flour or self raising flour and if i use self raising should i also use baking powder as well its just that 1 recipe says strong flour and another recipe says self raising

I've just sorted out my cheese scone recipe but riittaa has beaten me to it with her receipe which is very similar but also v. different: 225g organic plain flour, 1 tbsp. baking powder, pinch sea salt, 40g unsalted butter, 125g mature cheddar grated, 1 tsp dried English mustard, 1 tsp dried thyme and a pinch of cayenne pepper all bound with 125ml semi-skimmed milk. Sometimes I roll and sometimes I pat into shape. Cook as per your oven instructions. Yummy.

I find this recipe pretty good.
8oz self raising flour
pinch salt
1 heaped tespoon baking powder
2ozs margarine
6-8ozs strong grated cheddar(depending on how cheesy you want them)
1/4pint of full cream milk
1/2tsp mustard powder

rub in marg to all dry ingredients, until like breadcrumbs, add grated cheese, mix well before adding the milk.
Roll to 3/4inch thick.

Bake gas 6/200c 15-20 mins

I'm with Old Thatch on this one. Definitely a buttermilk fan for scones. Delia Smith has a gorgeous recipe for scones with clotted cream and raspberries on her site. Very well worth looking at.

I use self raising flour and buttermilk I have Paul Hollywoods book hungryman but haven't tried it but will if they as good as you say and compare!!!

Good morning

The best scones I have made (my wife's opinion) were using the Paul Hollywood recipe on this site.

So far this has been a can't fail recipe for me.

I use 12oz strong plain flour, 3heaped teasp baking powder, 1/2 teasp salt, dsp sugar, 1 egg and 3tbsp oil beaten together then made up to 1/2pt with milk, leave out the sugar if making cheese scones, but add level tsp dry mustard powder instead. Gas 7 15-20mins
