An abundance of frozen peas

Thread Starter: ruthinder    Started: Fri 09 Jun 2006    Replies: 7

Hi does anyone have any good recipes for frozen peas i.e dips, sauces, salads etc.
I think frozen peas are the worlds best invention but there must be more to them than just sat next to chips.
Any ideas would be most welcome as I seem to have taken advantage of the B.O.G.O.F offers too many times Cheeky

I also don't unstand how people can claim copyrights on recipes. You could start a thread on Food Chat.

I agree with the people above, the best thing is pea soup. I use Nigella Lawsons recipe which is basically the same as Carl J posted w/out the chilli, but may try that the next time Smile

Does the cooking

Well we all like Pea and mint soup. Put pound of peas in 3/4 litre of stock. Cook. Purree with bunch of mint. Serve hot or cold. I prefer cold - very refreshing in this hot weather.

Numerous variations include adding bacon pieces and puree with peas. I like the idea of adding (green) chilli.

How some people can write this as a recipe and then claim copyright on it amazes me. Er - yes I do have a thing about this subject at the moment. Where may I start a thread on this issue?

Sweat half an onion in a pan and add a pint of peas and a pint of stock. Chop in a red chilli. Bring to the boil and blitz til smooth.

Stunning.

I've got a really simple pea soup recipe that I love - add frozen peas to a saucepan with a bit of water, sugar and salt, bring it to the boil and wait until the peas are cooked then blitz it until it's smooth, then serve with a bit of sesame oil drizzled over it.

i too am a big fan of frozen peas, as they are very easy on my student budget! Smile
my favourite combo is pea and mint, so you can do pea and mint risotto, pea and mint puree with roasted garlic. one of my favourite recipes is peas a la francais: sweat thinly sliced spring onions in butter, then add a shredded little gem lettuce and add some white wine (a dash or a good slug, whichever suits you!) and about 100 ml of veg stock, when the lettuce has braised nicely add the frozen peas and warm them through, and finish off with a dash of cream and some black pepper and salt.
hope this gives you some ideas! Big Grin
