Freezing Advice

Thread Starter: bongomaphone    Started: Mon 22 May 2006    Replies: 5

Hi - I'm new to the forum and on holiday from work, so as the weather is miserable here, I thought I'd make lots of yummy things to freeze.
I've been reading the various threads on the site, and most people seem to say that pretty much anything will freeze. Normally I will freeze lasagne, chilli and soups, but I have recently made some stews and the potato texture has gone really grainy. I am now concerned that spuds aren't suitable for freezing, but what about fish or cottage pies with mashed spud - should they be OK? Is there a definitive list of what should / shouldn't freeze on this or any other site or book?
Also any thoughts on good recipe books for freezer food would be helpful - I love good wholesome comfort food but also keen on indian & thai.
Thanks very much in anticipation!

Hi have you tried making little wontons. Iam chinese and I always have them in my freezer. They can be cooked from frozen and and a light chicken stock are really good and comforting to eat. You can make them with any type of filling but make sure you cook the meat ones longer, but in saying that it does not really need that long to cook.

They are really easy to make. Go to a chinese shop and buy the wonton sheets they are yellow and come really to be filled.
As for fillings if you eat meat and seafood then a pork, prawn, spring onion and water chestnut filling is really yummy.

Hope that was a little help. Big Grin

Yes I've found that potatoes (unless mashed) don't freeze well.

I don't know any websites about frozen food (didn't get much from google) but I know Mary Berry has a couple of Cooking for the Freezer recipe books. Try ebay - search for Mary Berry and I'm sure you'll find something. Smile
