Eadie Manson Hot and Sour

Hi

I saw Eadie Manson make his hot and sour soup this week.
I wasn't really paying attention as I thought I'd just grab the recipe off the website.
I found the recipe but I'm a little confused by it.
It doesn't mention whether the pickling juice goes into the soup at the end. It just says to add the pickled mushrooms.
I would have thought that the picking juice would go into the soup as well, otherwise there wouldn't be much of a sour element.
Can anyone remember if that is correct or not?

You can buy jars of Tom Yam Gung paste in lots of supermarkets now. Just add a couple of teaspoonsful to a pint of boiling water then add some shredded chicken, prawns and sliced mange tout and simmer for 5 minutes. Delicious.

From what I remember, I don't think he added the pickling juice to the soup, just the pickled mushrooms. What I would do is make the soup as per recipe and if it was not sour enough, add some of the pickling juice to taste.
