Leek and butter bean bake

We had a leek and butter bean bake a few months back. I have never been a fan of butter beans but actually really liked it so have tried to find a recipe to do at home, to no avail.

It was sliced leeks and butter beans (as well as possibly mushrooms?) in a creamy, white sauce with a layer of sliced potatoes on top. Does anyone know of something similar or a variation of this that we could try?

Hello, I have a recipe called Butter beans and mushroom bake.It sounds similar to the one you describe, without the leeks. It's a cheese sauce with lightly fried mushrooms and a drained tin of butter beans,it's topped with bread crumbs mixed with some grated cheese, then baked in oven. It makes a quick inexpensive meal, good for veggies.To make the dish that you tried I would add some lightly fried sliced leeks to the sauce then top with sliced potatoes. Your recipe has given me an idea, I think I will top my recipe with mashed potato mixed with fried leeks, sprinkled with grated cheese. Smile
