Hi : I came across a recipe for Low-Fat Fruit Cake (also great for me as no added sugar just what you get from the dried fruits) The fat content is from almonds (55grams/2ozs for a 2lb tin size cake) Was from Leiths - you could perhaps email them - they might copy you this one : email info@leiths.com.
Citrus & Herby Meatballs (for 2)
170 grams lean pork mince (Tenderloin, butcher should mince)
2 to 3 tble lemon jiuce
zest unwaxed (or washed) lemon - grated
1 tbls each chopped fresh parsley and mint (or your own choice)
1 teasp ground cumin
1 teasp ground coriander
pinch each ground mace and cinnamon
dahe tabasco sauce and or worcester
50 grams chopped roasted aubergines
salt & pepper
Mix all ingriedients thoroghly. Make a small 'ball' and fry to cook - taste check seasoned to your taste. Form into small balls (large marble size): Non stick pan spritz with oil heat and batch cook -until well browned and cooked through.
Nice served in pitta bread with salad or with cous cous (you can mirror herbs and spices and maybe even add chopped dried apricots) Or in a tomato sauce with pasta.
Various different Salsas (veg or fruit) add a lot of interest:Love mayonnaise? - could try mixing a 'flavour' to low fat fromage frais - perhaps mustard or chillie or herbs
I do one using low fat yoghurt and from frais (equal quantities) - strain to produce a 'cheese' season and add herbs of choice - dill is rather nice. Whe4n being a little naughty I add a little mashed up strong blue stilton (I do mean a little and not often )
Low cholestrol need not mean total fat free, but careful choice of which fats to use so it could well be that your parents can still cook favs in a slightly different way - obvious is remove all visible fats from meats, choose less 'fat' meats ie poultry or pork. 'Dry fry' - good non stick pan and just a suspion of oil - teaspoon and wipe pan or use a pump spray and 'spritz' Fish even oily ones are 'good' fats. Use more herbs and spices
