make ahead xmas day desert

Hi, Am having all my family over for Xmas lunch. I am really stuck on what I could prepare in advance for dessert. My Mother in Law is unable to eat chocolate so any recipes that could be made without would be really helpful Smile

BANOFFEE PIE


MARIE BISCUIT OR TENNIS BISCUIT BASE
1 TIN CONDENSED MILK BOILED AND MADE INTO CARAMEL OR SHOP BOUGHT TINNED CARAMEL
3 NICE MED. SIZE BANANAS OR 4 SMALL ONES
LEMON JUICE

1. SLICE BANANAS AND SPRINKLE WITH LEMON JUICE
2. MIX INTO CARAMEL
3. SPREAD INTO BISCUIT BASE
4. TOP WITH CREAM AND SPRINKLE BISCUITS WHICH HAVE BEEN ROUGHLY BROKEN UP
5. NUTS CAN ALSO BE SPRINKLED ON TOP

I was going to suggest Eton mess but Marie has beaten me to it. or a version of it anyway. Its nice and light after such a rich dinner. Although I do love Xmas Pud!

We always have snow queen and melba sauce on Christmas Day. It is basically eton mess frozen ( in a pudding bowl so that it looks like Christmas pudding) served with raspberries and the sauce. Everybody loves it and the pudding itself takes only minutes to make. If you would like the recipe I will post it for you.

I would make Christmas Pud Ice Cream, it's easy, all you have to do is chop up a christmas pudding, mix with custard and put in the freezer or ice cream machine. When it's ready, put it in a nice bowl and for the remainder of the time leave in the freezer. Turn out onto a serving plate and serve with Maple Syrup drizzled on top.

Hi, I also often do a Banoffee pie/tart and made one for last Christmas as well. Altho' it is a cold dish it goes down a treat. Let us know if you want the recipe. Big Grin

Sounds great, never made banoffee pie before so the recipe would be wonderful - plus any tips or hints as to when I should make it. Does it need to be on the day or can i make it in advance? Smile

I always find banoffee pie a winner. I know it's not terribly christmassy but its fab. My mother in law actually introduced me to it. Its really simple to do and always goes down well. If you like the sound of it I'll send you her recipe.
