chilli's

hi all
i've been growing my own chilli's and i have got loads, can someone tell me how i can pickle them like you get in the jars in shops. as i dont want them to go to waste

you could also try oven-drying your chillies. place them on a baking tray and then arrange the chillies on the tray, then bake them on the lowest setting on your oven for several hours

I have grown chillis for the last few years, and always have loads more than I can use. I just put them in a freezer bag and chuck it in the freezer. They can be taken out about 5 mins befroe you need the, as thay dont take to long to defrost, I have never found them to wrinkle. They just go little bit soft and watery. They still have a good flavour also.

Hi Jennie, we use lot of chilli, we are always short of chillies so we don't have opportunity to preserve them. Having said that I will suggest you freez them by taking of the stalks, split them with knife, Scrape the seeds,blanch for two minutes, cool , dry and open freez them for few hours. Transfer them into a plastic bag and put it back in the freezer.
I must say we never take the seeds of but it is the only way to freez them.

Like you I too have loads of Chilli's. All I do is put them in a clean screw top jar and cover them with olive oil. You can leave them whole, slice them in rings or length ways leaving in or removing the seeds. They do start to lose their colour after a couple of months, but unlike frozen ones they don't wrinkle when they are defrosted. Keeping them in oil also gives you great chilli oil which is great for putting on salads or putting a bit in your cooking. I've just finished off last years batch - just in time for this years harvest!!
