Croquembouche - recipe and how to store

I want to make a Croquembouche as an unusual birthday cake for my father in law, similar to the french wedding cake idea. However I am trying to work out the logistics of it as I cant see how I can make it the day of his party and it doesnt look as if it will keep well.
I thought making the choux buns in advance and freezing them was one option then an assembly job on the day. Has anyone any other recomendations? And a recipe for foolproof Croquembouche.

You can make the choux buns and store them in an airtight container for a couple of days. I don't know about freezing them though.
