I have seen a few recipes lately using pomegranite molasses. Does anyone know where I can buy it? Waitrose don't stock it.

Last year at the end of the mango season we got loads of them for next to nothing and I made mango and chilli chutney/jam. I didn't have a recipe, I kind of made it up as I went along. This is fab with all the things you mentioned maraia but favourite as an accompaniment to a curry and with deep fried brie.
Scanpans ... wonderful things. I am saving up for another one! I remember singing the praises of my Tefal pans a few years ago but they haven't lasted whereas I can't see that anything can go wrong with my Scanpans. They are quality with a capital Q!

PS: It'll keep in the frig for what seems like ages - all the liquid boils off so dont despair when you see the onions swimming in wine & vinegar. The finished thing should look like, well, marmalade, and is quite a solid/syrupy consistency.
Delicious with everything - cheese, sausages, cold & hot meats, as a foil for spicy dishes & curries, great with tortilla, omelettes, you name it. Goes really well with aged Spanish Manchego cheese. Enjoy!

Hi David,
That pear in grapefruit sounds great and I can see the perfect match with the rich confit - similar to the Italian frutta di mostarda. Must experiment with the pear & grapefruit tho - I think allspice, star anise, cinammon stick, orange rind & cloves. I poached pears the other day in spiced syrup and stuck a fresh chilli in the poaching syrup and it was divine. Recipe follows for marmalde - thnx Mary for pointers about postings.

Maraia, I look forward to your recipe. It's the kind of thing, once you've learnt it, it becomes almost a family heirloom.
Talking of which. A great tip I learnt here in Belgium, where confit du Canard is popular. They often serve spiced fruit with the confit. I have learnt a trick of poaching pear quarters in GRAPEFRUIT juice, slightly spiced. With confit or as a desert with double cream, creme fraich its a discovery. Enjoy and thanks.

But on this site you can't exchange email addresses and you can't post the recipe unless it is your own and not copied from a book with copyright.
But if it is your own we would love to see it please. (The Ainsley one looks nice but I agree, it's not the same sort of thing)

Just checked Ainsley's link Mary and thats like a chutney or relish and is spicier, its not a marmalade as such. This one has red onions, red wine, sherry vinegar, sugar and the pomegranate molasses and is simmered for an hour and the whole thing reduces to a yummy syrupy deep-red consistency. You will become an addict!
I will fish the recipe out later 2day and try & fit it all onto this little chat box. Watch this space! Maraia

Sorry for delay. I am happy to give you both the recipe for this as it is so so delicious & versatile. I have ended up making it so many times coz I finish it so quickly.Can you suggest how to go about it as I dont know the rules for posting. david thegolfer, you aren't a newbie. You posted about Scanpan ... I now own a couple but you have to save up for them. They are worth it.
I'd like to see Maraia's recipe for red onion marmalade too but she may not be allowed to post it.
Ainsley has one on this site but it's not with red onions and the picture doesn't look all that great ... here's the link [link]

Wow you are all so helpfull! Thank you for your kind offer Maraia. I will try to get to a middle eastern shop first. I did try at Sainsbury's but they said they do not stock it.I might even try making my own. It is a pity the supermarkets don't stock it as it seems to be popping up in recipes lately.

Hi there Glynis,
Just noticed yr.request - all Lebanese and Middle Eastern shops have them if you have access to some. The best brand to get is an Iranian brannd called 1&1 (they make v.gd jams & pickles too) - don't think about getting any other brand as I have tried them all & this outstrips the lot, it is the real deal- and I cook with the stuff all the time. Many of the brands are sweetened, which you don't want. I have an absolutely out of this world recipe for red onion marmalde with it in it - if U'd like it, give us a shout. Happy cooking.

Hi glynis you can get it on www.thespiceshop.co.uk they also stock a load of wonderful spices and hard to get stuff, I found them when I was looking for spice tins, they sell the most amazing little yellow spice tins and their delivery is very fast.
