Can anyone tell me if you can freeze cheese? I have a large amount of cheese that I do not think I can use before the 'use by date'. Or perhaps you have recipe ideas that will use lots of cheese that I can then freeze.

I have frozen the harder cheeses before without a problem,the only thing is they tend to crumble once you get them out o fthe freezer.

I might be wrong, but I think the harder cheeses are easier to freeze. I always grate my cheddar and then freeze.
