Fruit Cake Shelf Life

Hi there.

I have made a couple of fruit cakes and am unsure how long they will keep - ie. will they make it to Chrsitmas.

The recipe includes:

glace cherries
dried apricots
sultanas
almonds
tinned pineapple
lemon zest

and it is a standard fruit cake sponge:

flour
margerine
sugar
ground almonds
eggs

They will be stored in airtight waxed\greaseproof paper.

Please can someone let me know how long they will be OK for.

Friut cake has a very long shelf life, for example Wedding cakes are kept for months to mature.

Yours should be fine, just the tinned pineapple might be a slight problem but not bad if it was in syrup also would have used butter not marg in a cake like this.
It is a good idea to use strong bread flour for a rich fruit cake as the extra gluten in this helps.
Sprinkle some rum or brandy over before wrapping and this will also hepl its keeping qualities.
