Dried Chillies/Chilli Oil

I have got a chilli bush so I've got loads of fresh chillies. Can anyone please tell me first of all how to dry them & also how to make chilli oil - and do I do that with fresh or dried chillies?

Chilli oil is simple! Ideally you need something like SUN FLOWER oil! Reason? Because it does not have a taste. Find your self a sterilised bottle (health and safety and all that) chuck in the oil and add chilly flacks!! Leave it to take on the flavours and there you go! More the chilli flacks, better the flavours. Good luck!! Smile

Hi Furley, chillies also freeze very well, thats what i do with mine so i have a supply of them though out the winter Smile

I tend to just chop up the chilli's, some split down the middle with the seeds removed or into rings and leave the seeds in to give it a bit of heat. I'm still using the last of last years crop and have a load to do this year. The oil (I use olive) becomes infused with the taste of the chilli quite quickly and can be used either for cooking or put on pizza's, etc. However, as I also have a glut of tomatoes I think I'm going to try Vanessa's chilli & tom jam.

Hi Furley, I also have many home grown chillies. I use them up by making chilli & tomato jam. My husband loves it with bread & cheese! It is on this site, by Tamasin Day-Lewis.

Not sure about the oil, so would also love to know !?!
