All nice ideas, I agree with the egg custard tart or even custard slices could be made, maybe with fruit added as well? Quiche? I love it, mushroom, asparagus or broccoli with cheese are my favourites.
Pancakes are good, so many fillings you could use, what are your favourites? I would use mushrooms, peppers, onions, some salsa and soured cream. Mushrooms in a creamy white sauce. Red onions gently fried then add some balsamic vinegar, wrapped up in the pancake with crumbled feta cheese. Or how about some smoked haddock with a cheese sauce and some gently wilted spinach?
I have never made a proper moussaka Mrs WW, as I never used to like aubergines, but can see where you are coming from. Do you use the traditional lamb in yours? and how do you stand on the "to salt or not to salt aubergines"?
