replacing alcohol in recipes

hi all
one of my flatmates is Muslim and can't have alcohol in anything, even when it's burnt off. What can I use to replace wine in coq au vin, risotto and casseroles for example?

I'd appreciate any ideas!

Is vinegar allowed? I would use stock laced with balsamic vinegar to give the kick. But as vinegar is normally fermented is it too similar to wine to use as well?

coq au vin will just turn into chicken poached in stock (add some little gem lettuce, peas and spring onions and you've got a one pot din.

Thanks kassey and tina6 for your help. I tried out risotto with just stock and that worked out very well. Coq au vin didn't however, so I'll just have to save that one for when he's not around!

another thing is things like gelatine
they can't have that either, so its a matter
of checking packaging too, hope that helps

hiya jini (hello kassey)

my bloke is muslim and tbh they are
a real pain to cook for, as you cannot
use bog standard meat cubes (cos if
they are true muslims) they eat only
"halal" meat, so what i do is just use
veggie cubes instead of meaty ones, or
go to my local "asian halal butcher/store"
to get the goodies, i have on occasion used
the beef cubes and a glass of wine in the
food, he was none the wiser :wink: my theory
is as long as they don't know, they can't
taste it Big Grin

Hi Jini, I would use stock chicken ,beef,lamb,veg,according to what you are making
