Hi Nick. How are you? Got some rain here today after many months of drought.
My French friends's recipe for Rouille:
parboil 30g sweet red pepper and a small chilli pepper with seeds left in. Add 4 cloves crushed garlic and 1 tspn thyme, basil or herb of your choice. Pound in a mortar.
My friend puts potato in her fish soup and keeps one back, sliced and cooked and adds it to the rouille, mixing well.
