Any recommendations for Florence & Siena?

I'm going to Florence for a week then Siena for 3 nights on 15 September. Does anyone have any recommendations for restaurants in these cities with either a) good views, or b) unique atmosphere/environment? Obviously, good food is a must, and, with 10 nights to eat, the budget can vary considerably. We are probably only looking for regional or Italian menus (rather than Chinese/French/Indian or whatever).
We'll also be visiting San Gimignano, Lucca and other Tuscan towns, so any suggestions would be appreciated as I don't want to waste our precious time searching for good food and restaurants when there are such wonderful sights to see.
