I am surrounded by apple orchards, both eaters and cookers and am fed up each year cooking the same things, i.e. chutneys, tarts, juicing them, stewing them etc. Has anyone any new ideas for using up apples?

Yes frexy, mint jelly is lovely a fantastic glaze for lamb. You could also try drying some apple slices for future use.
Apple fritters are nice, also sweet potatoes and apples with calvados is a great dessert.

In the malls in CA they sell apples dipped in choc. and/or toffee. These go for $3-$4 a pop. You could be looking at a potential internet money making adventure here my pal.

Try making herb jellies using apples as the base, or adding chillies to an apple jelly.

Baked apples? French apple tart? Sell some? Apple sauce jars for all in Xmas stockings? I used to have an apple tree at my last house, I really miss it, oh how I envy you!
